If you guys don't mind taking carts then my #1 recommendation would be Arthur Hills' River Islands GC.
www.riverislandsgolf.com Good conditions with zoysia fairways and bent greens. It is most definitely a cart ball course but one that is high on the memorability scale. Check out the routing and you can see where it gets its name:
Another option on the west side of town is Willow Creek,
www.willowcreekgolf.com The former home of the Knoxville Open. They've gotten a bit carried away with the ornamental plantings out there, but it's a fun golf course and the service there is CCFAD good.
Ruggles Ferry is a course I played a few times and liked a lot when I lived in Knoxville. It was a new course back then so it had its bare spots, but it is one I would love to get back to to see how it has matured.
