I have to be honest, any bucket list I would come up with is based primarily on what I think looks interesting. I don't have an over-riding idea of what I hope to learn and I have no interest in devising such a list based on that criteria.  

If I were to get serious about any such list to use, it would be based on archies and the first archie I would seek out is Fowler only because I believe he came the closest to sticking with the ideal of building courses on the land.  The thing about Fowler is that he did this even when the land wasn't ideal.  Sometimes he was quite subtle and other times he was quite radical.  Yes, I wouldn't mind seeing all Fowler's courses.  Next on the hit list would be Simpson...
