Jason:
If you're heading south from Orlando, I would second the Southern Dunes recommendation. I would also recommend Diamondback which is pretty near Southern Dunes (southwest of Orlando near Haines City). Diamondback is a Joe Lee design - the best thing about this course is the setting - holes are cut out of the forest, run alongside pastures, and through some rolling, sandy hills. No houses! Except for a couple of holes along the road, it feels very secluded.
http://diamondbackgolfclub.net/I've only played Southern Dunes twice (on the same day), but I really liked this course. Steve Smyers design - lots of bunkers and sandy waste areas. Greens were in great shape and very fast. Great food in the clubhouse, too. The only thing I didn't like here was the encroachment of the houses on the course, but, hey this is Orlando.
