UK Golf Guy has also recently entered the market in Australia. I believe his first trip is upcoming so you could review the itinerary for that and see if it fits your needs.
New South Wales GC will be closed for the summer 24/25 for a rebuild and I don’t believe the new Gil Hanse course at Royal Sydney will be open yet, so Sydney may not be a drawcard for golf* but it’s a great city for a tourist.
If you’re looking at early in the year, I’d recommend mid-March to end-April for great course conditions without stifling heat.
* this is where a Melburnian chimes in and says “it’s not a drawcard even when all the courses are open!”
