As you know, there are very few private options here. A residential recluse with an attached 6/9/12 hole loop or executive/par three offering, to me, would be very attractive.
Farmstead, which recently closed, was a particular place of interest in this regard. The property is enormous.
Like you (I assume) "non-traditional" courses are still a tough sell.
The Aero Club at the south end, close to Market Commons, is attempting a similar experience, though the marketing is more beer friendly than family friendly.
P.S. If anyone is within 20 miles of the Market Commons, go to Toffinos. Order anything and overspend on the pastries.
