Great video and commentary as well -- the camera does make the fairways look like hogsback fairways, and the course looks quite narrow. Is that the case?

Seaton Carew in my memory plays similar to the width it appears in the flyover. There are many parallel fairways with a stretch of tall grass and hummocky small dunes separating them. But each fairway itself is wide enough to allow fair play on a breezy day but not Old Course wide or anything like that. You will end up in that knee-high to shoulder-high grass occasionally unless you're a fairly straight hitter.

At least that's how I remember the course from two rounds there several years ago. I'd forgotten how much I enjoyed it until watching that flyover video.
