The Peninsula Club in Cornelius, NC on Lake Norman, a Rees Jones has 5 pars on #1, #9, #10 and #18.  #9 and #18 are both risk reward and #1 and #10 are similar three shot 5 pars for the average golfer.

Another Rees Jones course, Shadow Hawk. 1, 9, and 18 are par 5's.

Like Sunningdale New, De Pan and Haagsche here in Holland (both Colt & Co, Haagsche primarily by Alison) each have a starting and finishing par 5. The starters are relatively easy holes with wider fairways, the 18th at either course has more trouble.

When I played Sunny New I think the 1st was a par 4 and I was surprised the 18th wasn't a par 4.

I never played Sunny New, I just saw it mentioned and found it remarkable as a good deal of the courses starting and finishing with a par 5  seem to be by Colt or his disciples.

Thinking of courses in New Zealand off the top of my head

North Shore Red
Te Puke (distinction of having Par 5s book end each 9)
Millbrook (remarkables and coronet loop)
Wairakei

They are all relatively friendly introductions to a course as a general rule and forgiving of a loose shot without wrecking your round the way a strong or even medium strength par 4 could.

And, of course, Haagsche has a par five for its tenth too - so both possible starting points are three shot holes.

Rancho San Marcos, over the hill from Santa Barbara, open and closes with Par 5's.  But the course, designed by RTJ Jr., doesn't stop there.  It has 5 par 5's and 6 (yes, I had to go back to the scorecard) par 3's.  Can't think of another course with 5 par 5's resulting in par 71. 

RSM is not embedded in a housing development, a rarity in CA.  I had high expectations, but was generally disappointed.  There were memorable holes, but overall, I found the design forced.  Only played it once, but I would love to look at that routing again to see if really begged to have that configuration.  I see Bruce Charlton occasionally at Southern Highlands in Vegas, a course he was very involved in designing.  Curious to see if he was involved in RSM and his thoughts.

Royal County Down and Kilkeel. When i used to sketch golf courses when I was younger they always started and ended with par 5's.
