Stanford University Golf Course has a beauty.  A long downhill par 4, with views of San Francisco and the entire Bay Area.  Famously used for "ice sledding" on ice blocks, by students throughout the years.

While the hole is more, up, around, and down as opposed to purely downhill, the 18th at Yale finishes on a decisively downhill note.

Hard to think of it as playing downhill while you are slogging your way up the mountain after hitting your second shot.  Green site is at a fairly low point relative to the overall property, though.

I remember reading something a long time ago (I have no idea what is was) that stated, regarding golf architecture, downhill finishing holes should be preferred to give the tired golfer an easy walk to finish the round.  However, certainly more courses than not have an uphill finishing hole.

What do the archies think about this concept or does it depend mostly on client expectations/requirement?

Jim Engh's Red Hawk Ridge finishes with a downhill par 5, which gives you a good birdie chance but is not one of my favorite holes.

Another steeply downhill finisher can be found at Greywalls.  Stark contrast between the narrowing chute one faces off the tee and the way the hole widens dramatically en route to the green.

Gog Magog old course has a fine (and tough), straight downhiller. On just about the only hill in Cambridge

Kapalua Plantation was also the first one to occur to me. 17 and 18 are both hugely downhill.

Thinking of courses I know in the Phoenix area ...

Grayhawk Raptor has a reachable downhill par 5.

Arizona National in Tucson has a very cimilar type of hole for #18, as well.

Eagle Mountain in Fountain Hills, AZ has a markedly downhill par 4 to finish

Arizona Grand (Tempe, AZ) has a drop shot par 3 as #18.

Club West has a par 4 where the tee shot is well downhill.

So, perhaps not as common as an uphill finisher, but certainly there are plenty of examples of it.

Waterford Golf Club has a severely downhill finishing hole of about 400 yards. I'm pretty sure it's drivable given the right conditions.

18th hole at Pine Canyon, a Jay Morrish design in Flagstaff, AZ, is a 460-yard par-4 that falls about 70 feet from tee to green.

But that's nothing compared to the mother of all downhill 18th holes, which i just was at: TimberStone, in Iron Mountain, Michigan (Upper Peninsula), designed by Jerry Matthews and Paul Albanese, where the 620-yard par-5 18th falls 175 feet.

Most courses finish with an uphill or level hole because of the preference to locate the clubhouse on high ground.  

Does the course sometimes suffer due to this?  i.e. if the architect could design holes on that high ground, would the courses turn out better?

The 18th at Plum Hollow plays downhill to a green that sits at the base of a hill below the clubhouse perched above.  The 18th at Birmingham CC (MI) also moves its way down hill, though to a lesser extent than Plum's finisher. 

The 18th at University of Michigan GC is also a strong downhill finisher - a long par 4 over water.

#18 @ Skyview Golf Club in Sparta, NJ plays significantly downhill.
