Based on the criteria that these must have stirred the soul and senses and given much pleasure:
Muirfield Ganton Elie Cruden Bay Machrihanish Silloth Saunton Kington Prestwick Royal West Norfolk
Not the best 10 courses I have played but all right up there in terms of the pleasure the course has given me. I thought long and hard about Alwoodley, Bamburgh Castle, Brora, Dornoch and even Carnoustie before coming up with these. With another couple of plays I could see Beau Desert challenging.

Experiences associated with playing these courses is a pretty major factor in my list.

Gosh, the GCA membership does get around...
I'm surprised at so few mentions of Donald Ross/Ross hallmark courses: Pinehurst #2, Seminole, Dornoch.
I'm also surprised, and a little impressed, with the uniformity of a lot of the lists.
Anyway, here's mine, heavily limited by the courses I've actually had a chance to play... (Five in the world) 1. Muirfield 2. The Old Course 3. Prestwick 4. Riviera 5. Pinehurst #2 (Pre-Open; Tom Doak says it can be fixed, so it makes my list.) (Five in my backyard) 6. Oakland Hills (South) 7. Franklin Hills 8. University of Michigan GC 9. Arcadia Bluffs 10. Detroit Golf Club (South, not North. Dammit.)

Now that I think about it, Cruden Bay definitely "stirred the soul" for me.... but more in the direction of, "that place gave me the creeps." I can't really put my finger on any one reason either. Perhaps it started with the abandoned clubhouse when we arrived - no one at the front desk, no one in the dining room, no bartender.. only the guy in the pro shop. Or maybe it was the Dracula Castle off in the distance. Or maybe our caddie, who I really thought was going to pull out a cord and strangle us on one of the distant holes. Or maybe it was just that we were so far removed from literally everything. Never before have I played a golf course where I felt so isolated and alone. Even the town buildings running alongside #4 seemed abandoned and empty. I'm also surprised, and a little impressed, with the uniformity of a lot of the lists.
I actually think it'd be a fun thread to discuss some of the more random courses on people's lists.

Hopefully not just another list but a collection of courses that have stirred the soul and senses and given much pleasure. They certainly may not be Doak 10's but they are the tops for me.
Not neccessarily in order.
None are Doak 10's and for me it's more the setting and experience that stirred the soul than the quality/rating of the course. Per your criteria, I could only count 5. Lake Joseph Club Tryall Banff Sunningdale (Old) Osprey Valley Heathlands

This was harder than I thought:
Pine Valley Merion Pebble Beach Prairie Dunes San Francisco Ballyneal North Berwick Royal Dornoch Royal County Down Lahinch
Killed me to leave off The Old Course, Capilano, Eastward Ho!, Pacific Dunes, Pasatiempo, Turnberry, Portrush and Ballybunion, but Sir Bob says 10 and only 10.

I'm sure that many of the courses that have been mentioned would indeed stir my soul and senses and give me much pleasure, but I haven't been lucky enough to have the experience. Of the courses I've played, my top ten would be:
WF West Merion Olympic Lake Turnberry (only course I've played in that area of the world) Pac Dunes Shoreacres Bethpage Black Olivos (Buenos Aires -- for the step-back-in-time experience) Bethesda CC (my home course) Simsbury Farms (pure muni golf where I made many great friends and from which I have many great memories)

My Top Ten that I have played
1. Carnoustie 2. Royal County Down 3. Royal Porthcawl (I may be biased but a proud Welshman) 4. Ganton 5. Royal West Norfolk 6. Woodhall Spa 7. St Enodoc 8. North Berwick 9. Notts 10. The Golf House Club, Elie
Other notables that not made my top 10 - Royal Lytham, Royal Liverpool, Royal Worlington, Huntercombe, Harbour Town, Doral, Luffenham Heath, Hunstanton. Notts has vastly improved over the last few years due to tree clearance, re introduction of heathland and all bunkers rebuilt and new ones added.

I started to toss in my 2 cents, and suddenly realized...
I could list 3, maybe 4, courses at best! Nearly 25 years of golf & that is it!!
I learned the game on the Monterey Peninsula (yes, Ft. Ord counts!), but had to return 20 years later to finally play Pebble Beach. And even then didn't play Spyglass... dummy.
Spent my high school years in Hawaii, but the "best" off-Post experience I had was Makaha Valley. In 3.5 years, my family never left Oahu.
Lived in Knoxville -- never played Holston Hills. Now in Nashville & I still haven't trekked to The Honors.
Even lived in Orlando, but I excused not playing Sawgrass, Bay Hill, or at least World Woods on my grad intern stipend.
Every time I visit GCA.com I realize that despite my travels as an Army Brat, there is a lot of the world yet for me to visit & experience..... Scotland, Ireland, Oregon, and "I-would-never-have-guessed" --- Nebraska / Eastern Colorado.
