Subtlety really works for me.
#1 at Shinnecock is a wonderful example of an outstanding and subtle use of angles to create interest and strategy.
I like "large scale".
Bethpage Black always amazes me. #4 is just so big it is tough to play the hole without a ton of respect for your surroundings. Playing golf on such a grand scale is "interesting" as I'm often thrown off balance and out of my comfort zone feeling so "small".
Firm conditions are a huge help.
Balls that stop where they land simply are not as interesting as balls bouncing and bounding along the contours of play.
