Other than waterfalls, what are some of the current architectural fads that other or older clubs are adopting vis a vis renovation projects ?

Pat, renovation or remodel?  If it's a "renovation," it's unlikely a new waterfall would be added, I'd think.  

If it's a "remodel," classic could be replaced by modern and the sky's the limit.  Waterfalls, sheer drop offs, fairway bunkers deep in the rough............ :-\

Aesthetics — rugged grass, chop trees, make it look like something from the "ideal" period: August 3rd, 1914 through May 17th, 1937. Anything beyond that is taboo.

I've noticed that too.

Chipping areas seemed to be forced into nearly every old golf course.  Definitely a fad of the decade.

Square tees have been around for a long, long time.
Free form tees only came into vogue in the 60's and later.

Hairy bunkers and more long fescue/native grasses defining or framing a hole.  This seems pretty common at many of the newer courses I've played in 2005.
